- 500g Pork sausages - 1 Flaky pastry

- 2 kilos of pork loin, with cartilage and bones - 125 grams of fats or Saint doux

- Homemade chicken stock (1 liter) - 3 cloves garlic
First, bring some water to a boil in a large pot. Once it starts simmering, add the whole sausages and let them cook for 10 minutes. This helps remove some of the impurities and excess salt from the sausages. Drain the sausages and set them aside.
Slice the sausages diagonally into pieces about 2 cm thick.
Finely chop the onions and garlic, and dice the tomatoes.
In the same pot, add a generous tablespoon of neutral oil (such as grapeseed oil). Heat it over high heat and fry the onions. After about 5 minutes, add the garlic.
Add the tomatoes (along with their juices), the spices, and the kaffir lime leaves. Add enough water to cover the ingredients.
Let it cook at a strong boil for about 30 minutes. Then reduce the heat and let it simmer for another 30 minutes to 1 hour, allowing the water to evaporate and the sauce to thicken.
Meanwhile, you can cook the rice and the lentils or peas. These will be served as side dishes.
This delicious dish comes from Réunion Island and is traditionally served with rice and lentils or peas. In Réunion, these sides are called "le grain".
